The big boy, but don’t let it intimidate you.  It’s the pectoral muscle of the cow so its get plenty of work out.  That means you’ve got to take this low and slow and with plenty of time.  Flavor packed and ready for braising, or a long afternoon on a low grill.  Best mixed with a cold beer and bold flavors.
